The Sous Vide Technique

My next kitchen gadget review: Sous Vide. Does anyone have one of these? My husband bought this for me two years ago for Christmas and I returned it because it seemed just weird to me. What did I find under the tree this year? A Sous Vide!

“Once limited to the pros, sous vide (pronounced sue-veed) is a cooking technique that utilizes precise temperature control to deliver consistent, restaurant-quality results. High-end restaurants have been using sous vide cooking for years to cook food to the exact level of doneness desired, every time. The technique recently became popular for home cooks with the availability of affordable and easy-to-use sous vide precision cooking equipment like the Anova Sous Vide Precision Cooker.”

So, I gave it a try this time. It’s very easy to use. You attach the device, with a clamp, to a large pot filled with water. Plug it in. Set the temp where you want it (the app gives you a guide and recipes to follow). The water heats up. Seal the meat in a bag using a vacuum sealer or place it in a glass container. The meat can cook for hours and the Sous Vide will hold it at the desired temperature. When you’re ready to eat, simply finish the meat by searing it in a pan or grilling it on the BBQ for a crispy exterior layer.

It’s a pretty amazing device and it tastes amazing too!
