Waffle Wednesdays

This recipe inspired by 100 Days of Real Food has been in our breakfast rotation (Wednesdays, of course!) for a few years. My kids love them fresh and frozen!

PRO tip: When I make these, I mix the dry ingredients the day before to save time the morning of. Simply mix up the wet ingredients and pour in your premade dry mix. Add the leftovers to the freezer stash for another quick breakfast.

Whole Wheat Waffles


2 eggs
1 3/4 cup milk
1/4 cup canola oil
1 Tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp baking soda
2 tsp baking powder
1/8 tsp salt
1 cup whole wheat flour
1/4 cup old fashion oatmeal
1/4 cup flaxseed, ground
2 Tbsp chia seeds

Preheat the waffle iron. Mix together the dry ingredients in a large bowl. Mix the wet ingredients in another bowl. Add the wet to the dry and stir until well blended.  I usually add a couple blueberries once they’re in the waffle iron, and sometimes a couple chocolate chips 🙂

*I have a Belgium waffle maker and I add 1 cup of batter per batch and cook for 5 minutes.  This recipe makes 4 1/2 Belgium Waffles.
